About Us:
The Fuel & Iron Project aims to create opportunities for food entrepreneurs looking to open restaurants, consumer packaged goods businesses, and farms. For each category, Fuel & Iron seeks to open an incubator space where an entrepreneur can launch their business, growing revenue, brand recognition, loyal customers and a core team in the process. The Fuel & Iron Food Hall at 400 S. Union Ave. opened in April 2023, serving as the incubator for budding restauranteurs with 6 kitchens each leased to an independent chef. Fuel Kitchens is the incubator site for food manufacturers launching packaged products, and Fuel & Iron is under contract on a farm property, which will open in 2025. Through the launch of these incubator sites, Fuel & Iron aims to make Pueblo the best place in Colorado to launch a food business, allowing the region to attract talent from around the state while retaining more homegrown talent.
